So, I’ve recently joined Noom. And while WW was an AMAZING program that helped me drop just about 90ish pounds, I’d been debating making the switch for some time. I’ve been doing a lot of work on physical, emotional and mental health lately- so the migration just kind of made sense. Thus far, the biggest difference is the focus on the QUALITY of what you’re putting in your body. I don’t hate veggies. Do I eat enough of them. Absolutely not (thanks, Noom for your super visually appealing and informative data and analytics ;). So I’m on a mission to get more veggies in whilst getting in some comforty type foods too. Check out this new recipe that is in fact a hit!

Ingredients


⦁ 1 small spaghetti squash
⦁ olive oil
⦁ salt and pepper
⦁ 1 cups pizza sauce
⦁ 1 cups shredded mozzarella cheese
⦁ Favorite pizza toppings (i.e. pepperoni, peppers, pineapple 😉

What To Do!

  1. Pre-Heat oven to 400 degrees (See step 6- YOU CAN skip this part if you’re going to pressure cook/air fry this recipe)
  2. Using a sharp knife, very carefully cut the spaghetti squash in half lengthwise.
  3. Scoop out the seeds BEFORE YOU COOK. This is key.
  4. Brush the flesh of the squash with olive oil, salt & pepper
  5. Place the Halves open side down
  6. Bake the squash for about 30 minutes. PS- this whole process CAN be done in a pressure cooker. I did this in my IP- on HIGH for 8 minutes.
  7. After the squash is done cooking, let it chill for a few minutes. Then take a fork and fluff up the strings of the squash
  8. At this point add your sauce and cheese, blending it in with the strings of the squash. Add whatever toppings and seasonings at this point too. I did add an extra layer of cheese back over top
  9. Put back in oven and BROIL for 4-6 minutes. Again, I did this in my IP (I have the duo with air fryer top) and did about 400 degrees for 5 minutes.
  10. ENJOY your pretty stinking healthy “pizza” boat
